- 3 whole eggs, beaten
- 3 cups of flour, sifted
- 1 cup of milk
- salt to taste
Directions:
-In a large bowl mix together milk, eggs and salt
-Add flour a little at a time until well blended, dough will be sticky
-Bring 2-3 quarts of water to a boil
-Put dough in the basket of a spaetzle make and place over the pot
-Slide basket back and forth, pushing the dough through the holes allowing the dough to drop into the boiling water
-Stir to keep from sticking together
-If you don't have a spaetzle maker you can push the dough through the holes of a colander or potato ricer
-The spaetzle are done when they float to the top.
-Drain and Enjoy
Quick Meal:
Toss the drained spaetzle with a melted butter in a pan and sprinkle with parmesan
