  Ingredients

 1 cup butter room temperature

 1 cup white sugar

 3 eggs

 3 cups all-purpose flour

 1 ½ cups of ground almonds

 2 teaspoons vanilla extract or two packets Vanille Zucker (German specialty stores should carry this)

 

1.    In a large bowl, cream together the butter and white sugar until light and fluffy. Beat in the eggs, stir in the vanilla or Vanille Zucker. Stir flour into the sugar mixture, add the ground almonds and mix thoroughly.

 2.    Cover dough, and chill for at least one hour.

 3.    Preheat oven to 375 degrees F. Press dough out through a cookie press or meat grinder   with cookies attachment onto ungreased cookie sheets.

4.    Bake for 10 to 12 minutes in the preheated oven, or until lightly golden at the edges. Remove from cookie sheets to cool on wire racks.

 5.    Optional: Drizzle with melted chocolate or dip one end of the cookie into the melted chocolate.
