Vegetable oil for deep frying
3 lb. sweet potatoes peeled and thinly sliced
Seasoning of your choice, we love to use Creole Seasoning or a little Olive Oil and Salt
Directions:
In large saucepan, heat 2 inches oil to 325 degrees F.
Peel potatoes, wash and dry.
Using a potato peeler keep peeling/cutting the potato into thin slices.
Fry in batches 3-5 minutes, until golden (allow oil to return to 325 degrees F. between batches).
Drain on paper towels.
Toss in a large bowl with seasoning.
