Ingredients:

5-6 medium potatoes, boiled

2-3 cups of vegetables, just a tad undercooked. I used a mix of peas, carrots, corn, green beans and Lima beans

2 cups of chopped spinach

1 cup of shredded cheese (optional)

breadcrumbs or crushed corn flakes


Directions:

Preheat oven to 375

In a food processor combine potatoes, veggies and spinach, process until well combined

Add cheese (optional)

Add 2 tbs onion flakes, 1 tbs garlic flakes, sea salt, pepper and other herbs if desired

If the mixture is too soft add breadcrumbs or crushed corn flakes (think meatloaf) or oat flakes

Form little patties or nuggets and coat both sides with crushed cornflakes or bread crumbs

Bake for about 12-15 minutes at 375 or until nicely browned
