Dough can be made 4 days ahead!

Ingredients:

- 1 cup warm water
- 2 packages active dry yeast
- 1 stick of butter melted
- 3 eggs
- 1/4 cup sugar
- 1 tsp salt
- 5 cups of flour
 
Optional: 1 egg beaten  for egg wash

Directions:

- Combine the water, sugar and yeast in a large bowl. Let the mix rest for about 5 minutes.
- Stir in melted butter, sugar, eggs and salt. Mix
- Add flour 1 cup at a time until well mixes. Cover and refrigerate for 2 hours or up to 4 days!
- Grease a large baking pan.
- Divide chilled dough into 24 pieces and roll into a small ball.
- Cover and  let rise until doubled, about 1 hour.
- Preheat oven to 375.
- (Optional : brush rolls with egg wash for a nice shine)
- Bake rolls for about 15-20 or until golden brown.
